Well, that's not fairjojo is ~100 volumes long, while FMA is, what, approaching 30? Besides, FMA is monthly and JoJo was weekly, so chapter length parity could only be reasonably expected when SBR starting being released in Ultra Jump....
(On the other hand, each standalone arc is <20 volumes, which shouldn't be too daunting to anyone used to following major shounen series....)
